Rainbow Trout (Oncorhynchus Mykiss)

The rainbow trout belongs to the Salmonidae family. It has a long body and flat sides, with a clearly visible pink coloured stripe on its side.

Trout migrate – meaning they move to different places, depending on the season. They’re found mainly in the northern half of the planet and originate in North America.

Trout prefer cool oxygenated water, but there are two types – one that lives along coastlines, and another, the rainbow trout, which is a freshwater fish. They’re often bred in ponds and can reach a length of up to 70cm and a weight of 8kg. Only fish weighing between 300–500g are actually sold.

The trout is one of the most prominent commercial fish. The meat is light, slim and free from scales, tender and has a delicate taste. Trout is versatile and can be used for steaming, frying, grilling, baking or smoking. Trout with red meat is called ‘Salmon Trout’ – a skin colour or ‘pigmentation’ that’s a result of the fish’s diet.
